Dad’s Tuna Pasta

This is a great, simple and warming dish, perfect if you have lots of people to feed, and not too fishy for fussy eaters.

You will need:

1 large onion

3 tins of tuna ( you can add other tinned fish for extra bulk, texture and flavour)

3 tins chopped tomatoes

Pasta- 75g per person

Salt and pepper

Method:

1.Peel the onion and roughly chop, not making pieces too small.

2. Soften the onions over a low heat in a saucepan with some oil and large pinch of salt. Salt helps the onion sweat, so keep it on a low heat so the onions don’t fry.

3. Add the tuna and any other fish of your choice, salt and pepper and then add the tomatoes to the mix.

4.Mix well, then increase the heat until the mixture starts to bubble.

5. Reduce the heat so that the contents is simmering. Be sure not to cover the saucepan as you want the sauce to thicken by the water evaporating.

6. Dish up, and serve with pasta.
